Toast with Grated Egg (Recipe)

INGREDIENTS

  • Bread
  • Dried Tomato Pesto
  • Avocado
  • Egg
  • Pepperoncino
  • Lemon
  • Extra Virgin Olive Oil
  • Salt and Pepper
  • Chives

Dried Tomato Pesto

  • 1 Cup of Dried Tomatoes
  • 5 Basil Leaves
  • ½ Cup of Nuts
  • 1 Clove of Garlic
  • ¼ Cup Grated Parmesan Cheese
  • ½ Tbsp Oregano
  • ⅓ - ½ Cup Olive Oil
  • Pepperoncino
  • Salt and Pepper

INSTRUCTIONS

For the Dried Tomato Pesto

  1. Blend all the ingredients.

For the Toast

  1. Toast the Bread with Olive Oil in a Frying Pan.
  2. Spread Dried Tomato Pesto on Toast.
  3. Add the Avocado cut into slices.
  4. Season with Salt, Pepper, Lemon Zest and Lemon Juice.
  5. Boil 1 Egg for 12 Minutes, cool and Grate On Top of Toast.
  6. Season with Pepperoncino, Salt, Olive Oil and Chives.
