Roasted Pineapple Salsa (Recipe)

INGREDIENTS

  • 1 Pineapple
  • 1 Onion
  • 1 Yellow Paprika
  • 2 Tbsp Vegetable Oil
  • ½ tsp Cayenne pepper
  • ¼ Cup Vinegar
  • 1 Lemon
  • 2 Garlic Cloves
  • Salt to taste

INSTRUCTIONS

  1. Chop and place the Pineapple, Onion and Paprika on a Tray.
  2. Add Oil, Salt, Cayenne Pepper and stir.
  3. Bake at 450°F or 230°C for 40-45 minutes.
  4. Remove from the oven and add everything in the Blender with Vinegar, Salt, Garlic and Lemon.
  5. Blend for 5 minutes.
