Queen Pepiada (Recipe)

INGREDIENTS

To Boil the Chicken

  • Water
  • 1 Carrot
  • ½ Onion
  • 1 Celery Branch
  • 2 Garlic Cloves
  • 2 Bay Leaves
  • Salt and Peppercorns to taste
  • 2 Chicken Breasts

For Queen Pepiada

  • 2 Tablespoons of Mayonnaise
  • 1 tsp mustard
  • 1 tsp Hot Sauce (Optional)
  • 2 Avocados
  • The Shredded Breasts
  • ¼ Onion
  • ½ Gherkin
  • 2 Tbsp Cilantro
  • Salt and Pepper to Taste
  • Lemon (Juice)

INSTRUCTIONS

  1. In a Cast Iron Pot add Water, Carrot, Onion, Celery, Garlic, Peppercorns, Salt, Bay Leaves and the Chicken Breasts. Cook for 12 - 15 minutes.
  2. Still hot with the help of two forks, wick the chicken and set aside.
  3. In a bowl add Mayonnaise, Mustard, Hot Sauce and Avocado. Mix and grind.
  4. Incorporate the Shredded Chicken, Onion, Gherkin, Cilantro, Salt, Pepper, lemon juice and mix.
