Pasta Carbonara (Recipe)

INGREDIENTS
  • 100gr Guanchiale or Bacon
  • 2 Tbsp Guanciale Oil or Bacon
  • 4 Buds (Large)
  • ½ Cup Pecorino or Parmesan
  • Pepper to taste
  • 250gr Al Dente Pasta
  • 2 Tbsp Water Paste
INSTRUCTIONS
  1. Chop and fry the Guanchiale in a Steel Pan and set aside.
  2. In a Bol add Yolks, Parmesan Cheese Grated, Pepper, Guanchiale Oil and stir very well.
  3. Add the Pasta, 2 tablespoons of the Pasta Water and continue stirring.
  4. Add Guanchiale, a little more of its Oil and stir.
  5. Serve and add more grated cheese.
