Pasta alla Burrata (Recipe)

INGREDIENTS

  • 200g Spaghetti
  • 400g Cherry Tomatoes
  • 200g Burrata Cheese
  • 1 Garlic Clove
  • Olive Oil
  • Salt to taste
  • 1 Cup of Pasta Water

Green Parmesan:

  • 100g Parmesan Cheese
  • 20g Fresh Basil

INSTRUCTIONS

  1. Sauté the garlic, tomatoes and salt for 10-12 minutes in a pan with oil.
  2. Blend the tomatoes with the burrata.
  3. Return sauce to pan add pasta, pasta water and combine.
  4. For the Green Parmesan, combine the basil and Parmesan in a food processor.
  5. Serve the pasta and finish with the Green Parmesan.
