Roasted Beef Mulitas (Recipe)

INGREDIENTS

Meat Marinade

  • ¾ Cup Corn Oil
  • 1 Green Lemon
  • 1 Orange
  • 3 Garlic Cloves
  • Jalapenos
  • ½ tsp Cumin
  • ½ tsp Smoked Paprika
  • ½ Tsp Oregano
  • ½ tsp Salt

Green Sauce

  • 3 Tomatillos
  • 1 Serrano Chile
  • ¼ Avocado
  • 2 Tbsp White Onion
  • 1 Garlic Clove
  • 2 Lemons
  • ¼ Cup Cilantro
  • 2 Tbsp Corn Oil
  • Salt and pepper to taste

For Arming

  • 2 Corn Tortillas
  • ¼ Cup Mozzarella Cheese
  • Green Sauce
  • Pre-marinated Roast Beef
  • Onion
  • Cilantro
  • Lemon

INSTRUCTIONS

  1. For the marinade in a Bowl add Shredded Beef, Minced Jalapeño, Garlic, Oregano, Paprika, Cumin, Salt, Pepper, Lemon juice, Orange juice, Oil and Mix.
  2. Cover with Film Paper, place in the fridge and leave to marinate for 2-8 hours.
  3. For the Green Sauce, place all the ingredients in the Blender and blend until a homogeneous sauce is formed.
  4. In a Cast Iron Skillet place a Corn Tortilla and on it Mozzarella Cheese Grated, add a little of the Green Sauce and another Tortilla.
  5. Cook on both sides until golden brown.
  6. Add the Meat to a very hot Skillet and cook until browned.
  7. Arm with Tortilla, Meat, Green Sauce, Diced Onion, Cilantro and Lemon Juice.
