Southern Milanese (Recipe)

INGREDIENTS

  • Ribeye
  • Tray wet

  • 2 Eggs
  • ½ Cup Milk
  • Hot Sauce to taste
  • Salt and Pepper to taste
  • Dry tray

  • 1 Cup of Wheat Flour
  • 1 Tsp Baking Soda
  • 1 Tbsp Paprika
  • 1 tsp Garlic Powder
  • 1 Tsp Onion Powder
  • Salt and Pepper to taste
  • For the Sauce

  • 50 gr Unsalted Butter
  • 50 gr of Wheat Flour
  • 2 Cup of Milk
  • Salt and Pepper to taste
  • Chinese Chives
  • INSTRUCTIONS

    1. For the Wet tray add all the ingredients and mix.
    2. For the Dry Tray incorporate all the ingredients and mix.
    3. Fillet the Meat and flatten with a Meat Tenderizer.
    4. For the palisade of the meat, it goes through the Dry Tray then through the Wet Tray and we finish on the Dry Tray and fry.
    5. For the Sauce in the same Frying Pan having removed the excess oil, melt the butter, add the flour and cook for 1-2 minutes.
    6. Incorporate with a Silicone Spatula the Milk, Salt, Pepper and cook until the desired consistency is obtained.
    7. Sive the Meat add the Sauce and garnish with Chinese Chives.
