Chicken Chop (Recipe)

INGREDIENTS

For the Rice

  • 3 Tbsp Butter
  • 1 Onion
  • 2 Cups Basmati Rice
  • 3 ½ Cup Chicken Stock
  • 1 tsp Turmeric
  • Salt to taste

For the Chicken

  • Chicken Breasts
  • Olive Oil
  • Lemon Pepper (Salt, Pepper, Onion, Garlic, Turmeric and Lemon Zest)
  • Oregano

For the Sauce

  • 2 Tbsp Mayonnaise
  • 1 tsp Dijon Mustard
  • ½ tsp Curry
  • 2 Tbsp Water

INSTRUCTIONS

  1. In a Cast Iron Pot add Butter, Onion and fry.
  2. Add Rice, Curcuma and stir.
  3. Add the Chicken Broth.
  4. Bring to a boil, cover, and lower the heat. Cook for 20 minutes.
  5. For the Chicken add Oil to the Chicken Breasts.
  6. Season with Lemon Pepper and Oregano. Cook in a Grill Pan and Mince.
  7. For the Sauce in a Bowl add all the ingredients and mix.
  8. To assemble, place on a Ondo Plate Rice, Chicken, Chopped Tomato, Sauce and enjoy.
